Taste The Rainbow!

Yesterday’s post featuring that adorable striped sweater from Anthropologie reminded me of a picture I had saved a bit ago from Whisk Kid. How amazing is this rainbow cake?! Having just recently attempted to make a tiered cake myself, I know what an incredible challenge all those layers can be, so I’m doubly impressed. What I still can’t wrap my brain around is that frosting! How did she manage to make it so darn smooth?! The colors are equally as impressive and bright – wowza! Now if only I could get a taste through the screen…

    That is beautiful! I made a rainbow cake several months ago (I think for St. Patricks!) and while it wasn’t nearly as perfect it was so pretty and fun. I put pale blue icing on the outside with white puffy icing clouds!

    Yummy. I bet she had a long icing knife and dipped it in warm water to get the smooth finish. So cute for a summer party!

    One professional secret is to make the cake, trim it into layers and then freeze it. Frozen cakes hold their shape, have less crumbs and keep the frosting cold, too. Use cold frosting, apply a thin layer ( or brush it with a sweet, thick liqueur) and let that dry/set up. Then apply another layer a while later, smoothing it with a very hot cake spatula. I hope that is helpful. Enjoy!
